Freemans History

Co-founded by Taavo Somer and William Tigertt, Freemans Restaurant came to life unexpectedly when the two discovered the forlorn alleyway as a potential location or a Halloween party in 2003.  “The building was moody and brooding and gothic, like an Edgar Allan Poe story,” recalls Somer. “The space was singular—I knew right away that I wanted to open a restaurant there.”

With that, the two ditched their party plans, and set the wheels in motion to open a restaurant driven by the diner’s experience from start to finish. 15 years later, Freemans Restaurant has served as a model for reshaping New York’s culinary landscape from the unwavering use of local, seasonal ingredients to its immersive, singular dining experience. 

Menu

Inspired by the American colonial tavern, Freemans serves up a selection of warm and traditional dishes that pair well with their surroundings. Standout favorites include locally sourced Eden Brook Trout, Bone-in Ribeye Tomahawk Steaks, and the eatery’s signature five-cheese macaroni.  Under the direction of Executive Chef Harold Villarosa, the rotating rustic American menu takes on a new form every season and pays close attention to local ingredients.

Our Name

The restaurant name is: Freemans Restaurant.  There is no apostrophe in "Freemans."  Although Freemans is located in Freemans Alley, the word "Alley" is not in our name.  Freemans Restaurant is registered trademark of Freeman Holdings LLC.

  Harold Villarosa - Executive Chef   Filipino born, and South Bronx raised, Chef Harold Villarosa received his earliest culinary and agricultural education in the bukid (rice paddies) of Iloilo. fifteen years later, Harold’s work ethic and training have allowed him to work at some of the most renowned restaurants in the world, including Rene Redzepi’s NOMA in Copenhagen, and Thomas Keller’s Per Se. Harold is also the Founder of the Insurgo Project which takes practical applications from the culinary industry and empowers communities to pursue food justice through economic development. Harold took over as Executive Chef for Freeman Restaurant in 2017 and is the US Culinary Ambassador to Denmark.

  Eyrn Reece - Head Bartender   Originally from Portland, Oregon Eryn Reece moved east in 2007 to be part of the New York City cocktail scene.  She has worked her way up the ranks behind the bar at Bar Milano and Mayahuel, followed by a four-year tenure as Head Bartender at world renowned Death & Company.  Eryn is excited to raise awareness for female bartenders, and is a founding member and secretary of LUPEC NYC, and a Dames Hall of Fame Inductee by Tales of the Cocktail.  Eryn is Speed Rack National champion and has been featured in numerous publications, including Imbibe, New York Times, and Cosmopolitan.
